Chocolate Chip Celebration

National Chocolate Chip Day is recognized on May 15! While cookies may be the first treat to come to mind, imagination is really the only thing limiting how you celebrate chocolate chips in your baking. Use your semisweet or dark chocolate morsels to create classic cookies, low calorie muffins, sweet and speckled breads, and so much more. No matter what you're in the mood for, you'll find a new go-to dessert in this collection of our favorite chocolate chip desserts.

CHOCOLATE CHIP BLONDIES

Ingredients
1 1/2 cups packed brown sugar
1/2 cup butter, melted
2 large eggs, lightly beaten, room temperature
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2teaspoon salt
1 cup chocolate chips

Directions
1. Preheat oven to 350 degrees.

2. In a large bowl, combine the brown sugar, butter, eggs, and vanilla just until blended.

3. Combine flour, baking powder, and salt; add to brown sugar mixture.

4. Stir in chocolate chips.

5. Spread into a greased 13x9 baking pan. Bake at 350 degrees approximately 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into bars.

CHOCOLATE CHIP BREAD

Ingredients
3 large eggs, room temperature
1 cup sugar
2 cups sour cream
3 cups self-rising flour
2 cups chocolate chips

Directions
1. Preheat oven to 350 degrees.

2. Beat sugar, eggs, and sour cream until well blended.

3. Gradually stir in flour and fold in chocolate chips.

4. Transfer to a greased 9x5 loaf pan.

5. Bake approximately 65-75 minutes or until a toothpick comes out clean. Cool in pan 5 minutes before removing to wire rack to cool.

CHUNKY CHOCOLATE CHIP COOKIES

Ingredients
1/2 cup butter-flavored shortening
1/2 cup butter, softened
1 cup packed brown sugar
3/4 cup sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/8 teaspoon salt
1 cup miniature semisweet chocolate chips
1 cup milk chocolate chips
1 cup vanilla or white chips
4 ounces bittersweet chocolate, coarsely chopped
1/2 cup chopped pecans

Directions
1. In a large bowl, cream the shortening, butter, and sugars until light and fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla.

2. Combine the flour, baking soda, and salt; gradually add to the creamed mixture and mix well. Stir in the remaining ingredients.

3. Drop tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 350 degrees until lightly browned. Cool for 2-3 minutes before removing to wire rack to cool completely.

BANANA CHOCOLATE CHIP MUFFINS

Ingredients
2 cups white whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2/3 cup vegetable oil
1/4 cup Stevia
2 large eggs
1 tablespoon vanilla extract
3 ripe bananas, mashed
3/4 cup mini chocolate chips, divided

Directions
1. Preheat oven to 350 degrees. Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray.

2. In a large bowl, combine flour, baking powder, baking soda, salt, nutmeg, and cinnamon.

3. In a large glass measuring cup or another bowl, whisk together vegetable oil, Stevia, eggs and vanilla. Fold in bananas until just combined. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add 1/2 cup chocolate chips and gently toss to combine.

4. Scoop the batter evenly into the muffin tray. Sprinkle with the remaining 1/4 cup chocolate chips.

5. Bake for 15-17 minutes or until a toothpick in the center comes out clean.

6. Remove from oven and cool on a wire rack.
