Cookies that Melt Hearts

Is your homeschooling family looking for the perfect way to say "I Love You" this year to all your valentines? You and your children are sure to be a hit with these delicious valentine cookies that melt in your mouth!

Everyone loves cookies; and for the cost of one valentine card, you can make 2 dozen or more of these tantalizing treats for family, friends, and neighbors. Make a batch today with your children and give an inexpensive valentine that will long be remembered.

Cream together:
     1 cup margarine (softened to room temp.)
     1 cup sugar
     3 eggs

Add:
     ¼ tsp. salt
     1 tsp. baking soda
     2 tsp. cream of tarter
     1½ tsp. vanilla
     3¾ cups flour (stir in one cup at a time)

Thoroughly chill cookie dough for 3 - 4 hours or overnight. After chilled, allow dough to warm to room temperature. Divide the dough in half and roll out evenly to approximately ¼" thickness on well-floured pastry board. Cut out cookies using heart-shaped cookie cutters. Different sized hearts are fun to make, but smaller hearts will require less cooking time. Bake at 325º on an ungreased cookie sheet for 6 to 10 minutes. Rotate cookie sheet while baking cookies and watch closely. Cookies are done when the edges turn slightly brown. Recipe yields 2 - 3 dozen.

Frosting options:
  1. Before baking, brush cookies lightly with beaten egg using a pastry brush and sprinkle red or pink colored sugar on top. Bake as normal. (This is the quick and easy way to decorate cookies for your little valentines.)

  2. Homemade frosting recipe - 3 cups powdered sugar, 1 tsp. vanilla, 1 tsp. softened margarine, and approximately 1/8 cup milk. Mix first three ingredients and then add milk slowly until frosting reaches a spreadable consistency. (You want frosting thin enough to spread, but thick enough to hold sugar sprinkles and candy. Adjust the amount of milk used accordingly.)
Frost cookies when cooled and immediately sprinkle with colored sugar or add heart-shape candies. Be creative - let your child add their individual touch of love to design the perfect valentine cookie for family members and friends.
