Pumpkin Seed Snacks

With the cold, autumn weather comes the opportunity for plenty of family activities with many homeschoolers' favorite harvest: the pumpkin. This year, as your homeschool family carves a jack-o'-lantern or bakes a fresh pumpkin pie, remember to keep the seeds. Pumpkin seeds make a nutritious snack that is rich in fiber, as well as vitamins B and E.

Ingredients
1 1/2 cups of pumpkin seeds
2 tsp. vegetable or olive oil
Salt to taste

Purists may only want to use salt as a seasoning, but if you're feeling adventurous, try experimenting with each of the options listed below or a combination of them:

Tasty Options
Large granulated salt
Seasoning salt
Garlic powder
Cayenne pepper
Cajun seasoning

Directions
While leaving some strings and pulp on your seeds for extra flavor is OK, clean off any major chunks by rinsing seeds in a strainer. Place pumpkin seeds in a bowl and stir in the oil and seasoning of your choice. Spread seeds on a lightly oiled baking sheet in a single layer and bake for 1 1/2 hours at 275° F. Stir occasionally until golden brown. Serve warm with hot apple cider on a crisp fall day!
