Purple Ribbon Cookies

Summer is a great time to bake cookies with your homeschooled children. Baking cookies is a fun and delicious way to keep math skills fresh by reviewing fractions, measuring, and following instructions.
With practice, your child may even want to enjoy some healthy competition by entering cookies in the local 4-H county fairs or other community opportunities held during the summer. My grandmother was certainly proud of her granddaughter when she won a purple ribbon with her recipe for chocolate chip oatmeal cookies. You can try making them, too. Purple ribbon or not, it’s sure to be a winner at your house!
CHOCOLATE CHIP OATMEAL COOKIES
¾ cup white sugar
¾ cup brown sugar
1 cup shortening
½ tsp. salt
2 eggs
1 tsp. vanilla
Mix all the above ingredients in the order given and then add:
2 cups of oatmeal
1 ½ cup white flour (add ¼ cup more for altitude above 4,500 feet)
1 tsp. of baking soda mixed with 1 tsp. of hot water
1 – 1 ½ cup of chocolate chips
Let the cookie dough sit in a guarded refrigerator for at least an hour. Form into 1 inch balls pressed flat on a lightly greased cookie sheet. Bake at 325 degrees for 5-10 minutes. Uneaten dough yields 2-3 dozen cookies. Enjoy!
