Sensational Slam Dunks

March Madness is here with enough action to keep even the craziest college basketball fan excited! So take a day and set aside your Switched-On Schoolhouse®, LIFEPAC®, or Horizons homeschool curriculum to enjoy the fun! Everyone loves a wide range of chips, salsa, cookies, and soda for the game, but why not go for the three-pointer? If you're expecting homeschool friends to join you around the TV, score big and turn your good party into a great one by including these tasty snacks on your menu line up:

Quick and Easy Nacho Dip
Optional ingredients:
½ tsp. chopped cilantro
1 small jar jalapeno peppers

Melt cheese on low in a slow cooker and add salsa and browned hamburger. Stir occasionally and serve on tortilla chips (warm chips in an oven for 3-5 minutes at 200º). Make your nachos "grande" and serve with toppings of sour cream, guacamole, lettuce, and tomato. Serves 6-8 excited fans!

Basketball Fruit Pizza
Crust: 1 box of lemon cake mix (uncooked)
¾ cup crushed graham crackers
¾ cup margarine (softened to room temperature)
1 large egg

Mix the above ingredients together in order (if mixture is too crumbly to spread, add 1 tsp. of water or milk) and pat "dough" into a 9" round, metal, ungreased pizza pan. Bake at 325° for 12-15 minutes. Watch closely, crust is done when edges turn slightly brown. Completely cool before spreading with cream cheese mixture.

Cream cheese topping: 8 oz. cream cheese (softened)
2 cups of whipped topping

Mix together well and spread like frosting on the above crust. Add fruit to the "pizza" one hour before guests arrive. Suggested fruit toppings: drained marchino cherries, drained pineapple tidbits, kiwis (peeled and sliced in half), green or red seedless grapes halved, fresh strawberries halved, or fresh blueberries. Be creative! Use several different fruits and arrange in a basketball shape or make your team's logo or mascot. Serves 6-8 sports fans.
